Creamy Dressings

Creamy dressings need two things to work: enough acid to cut through the fat, and enough emulsifier to keep it together after it has been sitting for ten minutes.

Homemade versions use the ingredients themselves — the lecithin in an egg yolk, the natural emulsification in tahini. The result is a dressing that coats properly and does not separate on the plate.
