Seafood & Fish Marinades
Fish is the most misunderstood protein to marinate. The timing window is small and the penalty for going over is severe.
Citrus on salmon for 30 minutes starts denaturing the protein the same way heat does. Leave shrimp in a citrus marinade for an hour and it comes out with a rubbery almost-cooked texture before it ever hits the pan.
The rule: 15 to 30 minutes for most fish. Never more than 1 hour for anything. Every recipe here has the timing built in as a non-negotiable — not a suggestion.
