Fish & Seafood Rubs
Fish rubs work on a different timescale than meat rubs. Put a heavily salted rub on salmon 30 minutes before cooking and you have started to cure it, not season it. The salt draws out moisture and changes the texture in a way that is hard to reverse.
Apply the rub 5 to 10 minutes before cooking, not an hour before. Lower salt content. Higher herb and spice concentration. Every recipe here is built around that constraint so you get real flavor without accidentally curing the protein.
